CA – the final technique we use to preserve fruit is called ‘controlled atmosphere’. We lower the oxygen levels from 21% in the air we breathe, to about 1.5%. This is only just enough oxygen to keep the apple alive. It puts them in a ‘sleeping beauty’ state. The rest of the atmosphere in the room is mainly nitrogen, of which there is about 79% in the air we breathe. While the fruit is in CA it is forces to respire very slowly. When it comes out, respiration starts moving more quickly again. The most important part of CA is how long the fruit has been out of the CA store. Many people have fruit in CA for 3 months, but out of store for many more. To be effective CA needs careful management. These storage techniques if done properly can keep apples fresh and crunchy long after being picked, so you can enjoy them from your fridge or fruit bowl all year round.
