2-3 Yummy nectarines, cut in half and remove stones (we recommend using Yummy Classic yellow flesh nectarines)

1T vegetable oil

Rocket salad leaves


Small fresh mozzarella balls

Good quality aged Balsamic vinegar


Heat grill to medium-high heat.  Brush cut side of nectarines with oil, grill approx. 4 mins on cut side, turn and grill another 4 mins or so.  Set aside to cool.

In a bowl, put in the rocket salad leaves, arrange slices of prosciutto, mozzarella balls and grilled nectarines.  Lightly drizzle with aged balsamic vinegar.
