If there is a better combo – we don’t even need to know about it. Waffles have made a comeback, they may have never been out of fashion but they do seem to be on the menu a lot more often these days and for good reason. Pancakes are great – and simple, pikelets, a little more fiddly but still delicious. Waffles however offer that same sweet comforting flavour but with the addition of that perfect CRISPY edge! 

Yummy Nectarines are that perfect fruit accompaniment to a sweet vanilla waffle. Hunny Nectarines have a smooth and soft flesh with a hint of acidity to cut through all the waffle sweetness. Which means you can be forgiven for adding a touch of maple syrup and any other household topping faves, like crushed walnuts, toasted almonds….pecans!?


2 cups Standard Grade Flour
4 teaspoons Baking Powder 
1⁄2 teaspoon salt
1⁄4 cup White Sugar 
2 Eggs, separated
1⁄2 cup melted Butter
2 cups warm Milk


Sift the dry ingredients together in a large bowl.
Separate the eggs.
In small bowl, beat egg whites until stiff.
Mix together the egg yolks, milk and melted butter and stir gently
Add to dry ingredients and mix well.
Fold in beaten egg whites but keep this step short so as not to overmix
Cook in waffle iron until desired crispiness is achieved! 

Add thinly sliced Yummy Nectarines, a dollop of whipped cream and any other delicious toppings for some extra crunch (and maybe a little drizzle of maple syrup for good measure).
