If you have a fluffy pancake recipe, then this twist is perfect. There is a simple recipe to follow. What a great way to start the weekend and adding an apple, ups the nutritional value, so it’s really a no-brainer!
Ingredients
1 cup of self-raising flour
2 TBS sugar
1 egg
3/4 cup milk
1 tsp vanilla extract
1 Yummy Rose/Royal Gala or Granny Smith apple (cored, peeled, sliced)
1/2 tsp cinnamon
3 TBS butter
Method
In a mixing bowl combine the flour, sugar, egg, vanilla and milk, don’t over-mix but make sure all big lumps are gone
Heat a frying pan and add a little of the butter. Pour 3/4 cup of batter into the pan. Wait for those first little bubbles to appear and then add your apple slices in any design you like on top of the batter.
Wait until the top of the pancake (from what you can see) becomes a little firmer, then brush the apples with a little of the melted butter. Carefully turn, making sure not to dislodge the apples and cook on the other side.
Sprinkle with a dash of cinnamon and serve as they are or with a good glug of maple syrup!
